Today was the first day of Fall here in Southern California.
Not the actual first day of Fall, but the first one that really felt like fall. As such I had to celebrate with some warm comfort food. Easy Thai Coconut Curry was exactly what I needed and I want to thank Imagine® Organic Culinary Simmer Sauces for sponsoring this post.

I haven’t really used simmer sauces before so this was a very welcome new discovery for me. Using my “Pan With a Plan” simple recipe I was able to recreate my favorite Tofu Thai Coconut Curry recipe. You just Sear your favorite protein (ex. beef, chicken, seafood, tofu) and add any optional ingredients, then just simmer with Imagine® Culinary Simmer Sauce. Here is how I made my Easy Thai Coconut Curry.
- Cook your tofu in coconut oil till all sides are browned.
- Add in broccoli and continue cooking.
- Add in Imagine® Thai Coconut Curry Sauce and simmer.
- (optional) Stir in rice.
- Serve!

I do not know… they all seem so unique in flavor. The Louisiana one is probably hot.. so veto that one.. but the Latin one or the one you cooked with seems good.
