Today was the first day of Fall here in Southern California.

I haven’t really used simmer sauces before so this was a very welcome new discovery for me. Using my “Pan With a Plan” simple recipe I was able to recreate my favorite Tofu Thai Coconut Curry recipe. Here is how I made my Easy Thai Coconut Curry.
- Cook your tofu in coconut oil till all sides are browned.
- Add in broccoli and continue cooking.
- Add in Imagine® Thai Coconut Curry Sauce and simmer.
- (optional) Stir in rice.

Sounds really good. I used to make my curry from scratch when I ate meat. I am Jamaican so we love our curried meat – I don’t now since I switch to almost raw vegan. That meal does look pretty good

I would definitely go for the coconut curry first. But my second choice would be Louisiana Creole. I like eating tofu but without a good sauce it can get boring. This sounds like the perfect solution.

That dish looks like a wonderful way to celebrate the first chilly day of the season! We’ve had weird weather here. It’s supposed to be colder. One day it is, the next it’s like 75. So weird.
