We have a tradition in our home. A pumpkin soup tradition that is.
For years my mom has been making her pumpkin soup on Halloween and Thanksgiving. We all look forward to it and race to get the first bowl. This year was no exception except we now have a vegan in the family and two family members who follow a Paleo diet. I took this as a challenge to recreate my mom’s pumpkin soup so that we could all eat it.
I love the way my Paleo, Vegan and just awesome pumpkin soup turned out.
It was creamy and full of flavor all thanks to Kelapo Coconut Oil. I think the inclusion of coconut gave more depth to the flavor and a little exotic flair! It’s our new favorite way to make pumpkin soup and it is already on our Thanksgiving menu this year!

coconut and pumpkin…. pumpkin soup…??? Never would have thought the two could be put together and I don’t think I’ve ever heard of pumpkin soup, other then making fun of a really bad and watery pumpkin pie.
