These muffins were inspired from my Best Blueberry Muffin Recipe. I love how the blueberry muffins turned out, but I was craving chocolate. I think I might have an issue with chocolate these days since just yesterday I posted the recipe for the Best Chia Chocolate Pudding. Oh well, it’s not that bad of a problem to have right?
Back to the muffins, these are the best around! The secret is the sour cream and the cream cheese! Double Wow!
I make these vegan and regular so both instructions are below. Enjoy!
The Ingredients:
- 1 cup unsweetened applesauce
- 1/2 vegetable oil or vegan butter or real butter {the fat of your choice}
- 4 cups unbleached all-purpose flour
- 1 teaspoon salt
- 2 cup of sugar in the raw or vegan sugar
- 4 teaspoons vanilla extract
- 1 cup milk or rice, soy or almond milk

3 teaspoons baking powder

1 teaspoon baking soda

1 tub of cream cheese or vegan cream cheese {about 8 oz}
- 1 tub of sour cream {about 8 oz}

4 whole eggs or vegan egg substitute

4 cups of chocolate chips
Combine all of the wet ingredients and the sugar. Next add all the dry ingredients and stir until it is all mixed together. Try not to over stir. Now fold in the chocolate chips!
Cook in the oven for 30 minutes at 350°F! Enjoy!
I just love chocolate chips and especially in my muffins. I eat them throughout the day, and the fact that their in a healthy recipe is just tops with me. thanks. Will try!!!

How many muffins does this make? Based on the amount of sugar and chocolate chips, it seems like it might be a double recipe? Maybe 24 muffins?
You are correct! I use this to make 24 decent sized muffins!
