Chocolate Chia Seed Pudding, Healthy and Delicious!

Amazing chocolate chia seed pudding. Better than regular pudding, tastes so good!

This is my new favorite snack. It takes 2 min to make and then you chill it for a bit and it’s ready to eat! It fills the “chocolate” fix I’m often craving and it’s a snack I can be okay eating and not feel like I just blew my healthy eating for the year.

The texture is much like tapioca pudding with a little crunch. I love the texture and I’m not a pudding person… if that tells you anything.

Definitely keep extra ingredients on hand because you will want to eat it again and again!

  • 1 1/2 cups coconut milk {almond, rice, soy or cow work too}
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons of  granulated raw sugar {sugar in the raw}
  • 1 tablespoon of agave {or more sugar}
  • 2 Tablespoons unsweetened cocoa powder
  • ¼ cup plus 1 teaspoon chia seeds

Combine the milk, sugar, vanilla and cocoa in a bowl. Mix well. Add chia seeds and stir well. Let sit for a minute or two and stir again. Refrigerate for at least 2 hours. It only gets better the longer it’s refrigerated. Enjoy!
