Have you ever found one or maybe five of these sad bananas on your counter? Yep, me too! Last night I was cleaning up after dinner and saw that I had 5 lonely, aging and browning bananas sitting all by themselves. I hate to waste bananas. You too? Anyways, I was in the mood for something chocolaty that I could quickly throw together. I thought about making my favorite chocolate chip banana bread, but I wanted something with even MORE chocolate. Brownies! I also wanted to use up those sad bananas. And that is where these Chocolate Banana Brownies came from…

Sad huh? Poor, poor banana! At least they are vegan! Not the banana silly, although that is too, but the brownies! I make all of my sweets plant based. We really like the taste of these vegan, even better than how we used to make them non-vegan years ago.

How To Make The Best Chewy Vegan Brownies

Vegan Chocolate Brownie Recipe

Ingredients:

  • 4 very ripe bananas
  • 3/4 cup of vegan butter {or your choice of fat}
  • 1 cup of vegan sugar 
  • 1 tbs of cocoa powder
  • 1 tsp of vanilla
  • 2 egg substitutes-  flax, apple sauce, etc. 
  • 1 3/4 cups of flour
  • 1 tbs of baking powder
  • 1 cup of vegan chocolate chips
  • 1/4 tsp of salt

Directions:

  1. Melt butter and chocolate chips on low heat. Let cool.
  2. Mix all ingredients and then add the melted chocolate.
  3. Pour into a 8×8 pan.
  4. Cook at 325 degrees for 30-45 min or until a tooth pick comes out clean from the middle.
  5. Makes 16 brownie squares.

After they cool cut them into squares and watch them disappear before your eyes.

  • Love this idea! I hate buying bananas because of this happening and not always wanting bread. I do always want chocolate!
    Do you taste the banana very much?

    • With 4 bananas in it you do taste them… it’s a good taste though they work perfectly with the chocolate. If you want more less of a banana taste try putting just 2 in and substituting apple sauce for the other 2. I’m thinking 1 cup of apple sauce. Let me know how it tastes if you try it 🙂

  • Thanks for this easy,vegan recipe!! they look delicious and I’m going to make them right now….I only have 2 bananas so I will sub with apple sauce and I’ll come back and tell you how they turned out. I’m thinking 1 1/4 cups of applesauce and will add more if the texture doesn’t seem right…..see ya
