Street Stand Potato Taco Recipe

There is a little taco stand here in San Diego called Pedro’s Tacos. They only have 4 locations and they are the ultimate fast and cheap Mexican food joint. Being a vegetarian I get a little tired of the old bean and cheese burrito and I got daring one day and tried a potato taco. I fell in love. The only problem is that they can be a bit high in calories with deep fried hash brown wedges, white sauce, and tortilla. I knew I could make a really good replica that was a whole lot healthier. And I did!

These are so easy to make and taste fantastic. When I shared on my Facebook Page that we were having “Potato Tacos” for dinner I got lots of “what are those” comments and I knew I needed to share these with you all right away!

How to make these awesome tacos:

  1. I started with some low-carb tortillas that were warmed in the oven… just till they got a bit soft.
  2. While your tortilla is warming up place frozen hash brown wedges onto a baking sheet. Spray the sheet and the wedges with olive oil. <— this is so important as it crisps it up and gives it the feel of being fried. Place in the oven at 425 till crispy {about 5-10 min}. Flip halfway through.
  3. Place a tortilla on a plate. Layer a good amount of cabbage onto the tortilla. Add a hash brown wedge onto the cabbage. Slice some avocado onto the wedge. Top with your favorite salsa and white sauce.

My favorite homemade white sauce: Add mayonnaise, sour cream, Greek yogurt or your favorite vegan alternative {I use vegan mayo} to equal parts of vinegar or citrus juice {I use organic coconut vinegar} Mix well. Season with your favorite spicy seasoning mix. I add a pinch of salt, pepper, garlic, and chili peppers. Refrigerate for a couple of hours to let the flavors melt together… or eat right away!

  • I have never had a potato taco, but it sounds divine. I love shredded chicken for a taco filling.

  • I have never tried potato in our tacos before. We eat them a lot because they are my husband’s favorite meal. I generally use ground beef or shredded chicken. When we’re running low on meat, we use refried beans.

    • Bean tacos are my second favorite. I actually use kidney beans and cook them in a little oil and them mash them. There is a touch of sweetness. Seasoned with garlic and salt… so good!

  • these look really yummy… I would have to do with out the avocado though I just cant seem to like the taste of it or texture.

    • There are a lot of people like that with avocado. You wither love it or hate it. I love it!

    I am in SoCal too, and we definitely have the best tacos in the U.S.! I lived in other places, and we have it made. The only veggie tacos that I’ve had before are mushroom tacos and the avocado tacos from the Seabirds truck. Both were amazing! I’ve had potato taquitos before, but never tacos. I’m pinning this ASAP!

  • I threw some leftover roasted potatoes into a taco shell recently…so good! I love the looks of this crispy hashbrown with the sauce – oh my goodness!

  • I love the idea of these. There is a deli that I go to in Studio City, CA and they have what they call Sliders. One is a potato latke with corned beef or pastrami. The vegetarian version and my favorite is a potato latke with avocado & tomato. They serve it with a side of applesauce and sour cream. OMG It is just soooo good. I like your version better tho, it’s easier.
