Even though it’s been a really long day {sick kids and all} and I have big plans of crawling into my bed and trying to get some good sleep before my big “bake fest” tomorrow, I really wanted to share these cookies with you all… Cheesecake Cookies with Cherries and Shaved Chocolate!
These are almost too extravagant for words. Think a graham cracker cookie with a cheesecake topping sprinkled with shaved chocolate and a couple of cherries and you will have these Cheesecake Cookies with Cherries and Shaved Chocolate! So good and pretty darn easy to make!
I loved the way the S’ more Cookies turned out so I used the same recipe again for Chewy Graham Cookies from Ice Cream Before Dinner. Again, I made the same changes… no cinnamon in the recipe and no cinnamon sugar on top.
Using her recipe and directions, I baked the cookies and let them cool while I made the frosting.
So easy… just take:
- 1 package of instant vanilla pudding
- 4 cups of powdered sugar
- 8 oz. block of softened cream cheese
- 1-2 cups of milk {depending on how thick you want your frosting/topping}
Beat it all together and let it thicken and chill in the fridge for at least 3 hours.
Pipe the frosting onto the cookies and then top with a couple of cherries and some shaved chocolate. You can use jarred cherries or fresh or some cherry pie filling. Whatever you like best!
