Hope you all are having a great weekend! I’m stopping in with a really quick and easy recipe today!
The past couple of weeks I have been a busy bee! I love being busy but I also like to eat and so does my family so I’ve had to get creative with meal prep! It has to taste great, be {somewhat} healthy and be really quick to make! This was all of those… and I was able to throw it together in less than 10 minutes!
These pictures don’t do it justice because I was hungry and just snapped these pictures so I could share it with you. It was one of those moments when I was like, this tastes so good I have to share the recipe… but I’m starving, so I’ll just snap a quick picture… so I did!
When I make this for my husband I add some cooked strips of chicken, but for us vegetarians, we just add extra broccoli!
Ingredients:
- 1 pound of your favorite pasta. I’ve had it with whole wheat, gluten-free corn, and white, they all work.
- 1 medium onion
- 1 clove of garlic, minced
- 1 large head of broccoli or a bag of the frozen stuff
- 3 tablespoons of olive oil
- 1 tablespoon of your favorite seasoning mix {I like Lawry’s or Season All}
Directions:
- Cook pasta according to package directions and save one cup of the pasta water.
- Cook the broccoli until it is tender.
- In another pan saute the onion and garlic in the olive oil until the onion is translucent.
- Add the pasta into the olive oil, onion and garlic mixture. Add a couple of tablespoons of the pasta water is there is not enough oil mixture to coat all the pasta.
- Sprinkle the seasoning onto the pasta and mix well.
The beauty of this recipe is that you can add anything to the base of olive oil, onion, and garlic. If you want it spicy you could add red pepper flakes… or you could add a different veggie or steak strips.
The possibilities are endless!
