Last week was one of the hottest weeks of my life.
I’m a total warm weather wimp. I guess that is why I live in So Cal. Normally our hot days are still pretty mild, not the past few days. They were scorchers! Now that the weather has cooled off to more of what we are used to I’m totally feeling fall in the air. Last night one of the girls even said she was cold when she woke up. Yep, it’s definitely not summer anymore.
These cookies will make you happy it’s pumpkin time.
Salted Caramel Pumpkin Cookies take all of my favorite cool weather treats and pile them into one cookie. They are soft and sweet with a little sprinkle of salt to bring out the caramel flavor even more. The pumpkin spice made me all warm and fuzzy on the inside too. I love the subtle flavor of coconut from the oil in them. Perfection!

I’m not the biggest pumpkin food fan –but I do love my caramel–might have to give these a try–I know the rest of the family would devour them in days!
I’m headed to LA today and my body is going to go into shock. I was looking at the weather and had to laugh. In Michigan you get the actual temperature and then “feels like” temperature is always cooler. In LA the “feels like” temperature was always hotter than actual temp. I can imagine it’s hard to get excited for fall during a heat wave.
