The Happiness that was Christmas!

I’m not quite sure how many times a post can be written and then re-written, but this one started with, “It’s getting closer to Christmas” then it became “Happy Christmas Eve” and then it was “Merry Christmas”. Now notice it includes the word “was”… my goal was to wish everyone a very Merry Christmas and I’m still going to! Here it goes… MERRY CHRISTMAS (a day late)!

We had the best holiday EVER! It started with Christmas Eve at my house. Both sides of the family come and we enjoy dinner, dessert, exchange gifts (we pick names) and then we do a white elephant gift exchange (I got a super man snuggy no comment).
I only bake once a year. Sure, I’ll throw together some cookies or cup cakes here or there… but Christmas baking is an entirely different thing…

These pretty little things look like cupcakes, but they are imposter’s! This is my husbands favorite dessert and I only make them Christmas Eve. They are the easiest thing to make, but I think of them as a Christmas thing, so they are only made once a year.

Peanut Butter Brownie Cups
Use boxed brownie mix. Mix as directed. Pour mix into 1/2 a cup cake liner. Squish in a peanut butter cup, cover with rest of mix. Bake as directed till a toothpick comes out clean. Frosting and sprinkles mandatory.

Follow instructions on Kraft marshmallow cream jar
I made one small change. I exchanged a bit of the semi sweet bar for a Fresh & Easy milk chocolate bar. I just like the taste and texture better that way.

Cake Balls

I had never heard of these before, and then I saw them here. They were pretty to look at, and I had a bunch of cheap/free frosting, so here they are . Don’t think I’ll make them again though. Just not my thing.

Peanut Butter Cookies with Peanut Butter Cups

These are a copy cat recipe from our most recent trip to Las Vegas. Again, notice the peanut butter theme. One of the buffet’s had ginormous peanut butter cookies with chopped up peanut butter cups sprinkled on top. I used mini peanut butter cups, chopped, because they were free!


I made a bunch more “goodies”, but they were gone by the time I came around with my camera!

  • I am so glad you had a wonderful, happy Christmas!!
    I think I just gained 5 pounds reading this post and looking at the pictures. The brownie cups look awesome, especially with a peanut butter cup in them! My beefcake (hubby) loves pb cups…maybe I'm not done with my holiday baking?
