BBQ Fusion Fajitas

Before we left for Florida, I wanted to make Pete and the girls a special dinner. We were all packing and planning, and we hadn’t spent a dinner together at the same table in a few days, so I decided it was time. The only thing is that it had to be really quick and easy to make. Time was at a premium!

Since we were going somewhere more tropical than our hometown of San Diego, I had visions of our recent trip to Hawaii in my mind while I created this recipe. I wanted to include a traditional BBQ flavor, and add to it a tropical flare with chunks of pineapple and strips of colorful peppers.  For the protein, I used veggie chicken strips.

This took less than 5 minutes to prepare and 30 minutes to cook. So easy! 

I used the new KC Masterpiece BBQ Sauce Mix & Dry Rub Original, and I mixed it with the juice from the canned pineapple. It was pineapple in it’s own juice, but you could totally use water, other juice types, soda, beer, bourbon and more. The possibilities are endless! I stirred that together and set it aside. Additionally, there are two other new flavors, KC Masterpiece BBQ Sauce Mix & Dry Rub Sweet Honey, and KC Masterpiece BBQ Sauce Mix & Dry Rub Spicy Habanero! Don’t those sounds amazing?!

After that, I combined veggie chicken strips, pineapple chunks, and pepper strips in a baking dish. Then I poured the sauce over.

I baked it for about 30 minutes uncovered at 350 degrees, mixing every five minutes of so. The caramelized chucks of pineapple kept being mixed back in and created such a depth of flavor!

To serve it, I just scooped the BBQ Fusion filling into warm tortillas and then we all enjoyed them immediately while they were still piping hot!

This is definitely a new favorite that I plan to work into our dinner meal plans, and to serve it to visiting guests!
