15 minutes is about all I can devote to making meals this summer.
I want us to eat healthy and tasty food so I have to plan ahead and focus on minimizing prep time to accomplish this. My Buffalo Chik Salad is my go to super quick recipe for busy nights.
Pete and I LOVE the Morningstar Farms® Buffalo Chik Patties and we routinely eat them on a bun, but one night we were in the mood for something different and that is how this awesome salad came to be! When I make this for the girls I use the Morningstar Farms® Chik’n Nuggets because they aren’t as into the spicy kick of the Buffalo flavor as we are. I call theirs a Chik’n Nugget Salad… and the little one thinks it’s the coolest thing ever!
The best part about this salad is that you can customize it to your liking.
I just go into the refrigerator and pantry and I use whatever we have and love. It takes seconds to make each salad different for each family member too. The Little One really LOVES corn… so I always add tons of extra corn to hers!
Here is how I made my Buffalo Chik Salad:
Ingredients:
- 1 Morningstar Farms® Buffalo Chik Patty, prepared as directed on the package and sliced into strips.
- Lettuce
- Tomato
- Olives
- Corn
- Avocado
- Tortilla Chips
- Ranch Dressing
Directions: Toss all ingredients together and enjoy!
We’ve also made the salad after BBQ’ing the patties and it was really good too!
It added another layer of flavor. There are so many other ingredients you can include… just go with your favorites…. I’m going to be adding roasted peppers and other vegetables next time!
If you have picky eaters be sure to add some extra ranch for them to use as a dip!
This is also a great way to get more veggies into your diet and that of your kiddos. My girls are all huge veggie eaters so I don’t worry too much about that, but if yours are not this would totally help!

Morningstar Farms meatless meals are soooo good! they really help to satisfy that craving for a hamburger or a salad with grilled chicken. They’re a staple of our vegetarian diet.

15 mins is a great time to prepare a meal and I think I can actually make that salad for my family. I like to spice up my salad once in a while and not just the usual iceberg lettuce, cucumber and cherry tomatoes with drizzle of olive oil and few lemon juice. This Buffalo Chicken salad will be something to up the ante in salad making. 🙂
I may have to make this for my kids for lunch sometime. It’s better than just plain old chicken nuggets.
I haven’t seen this flavor at my stores yet, but I’ll be on the lookout for it. I love these types of foods. I think its so great that you don’t have to worry about salmonella or gristle or anything. They are super tasty and your salad looks great!
