The Best Chocolate Chip Scones {with vegan directions too}

The Perfect Chocolate Chip Scones

One of the treats my daughter misses most since becoming vegan is a really good chocolate chip scone. Whole Foods has one that is amazing… but we are not always close to one when she gets a craving for one.

I tried a few variations of this recipe till I got it just right. The final change was letting it cook longer than my gut told me to. That almost never happens. I really feel like most of the recipes I come up with are intuitive. As much as I write down ideas and ingredients, when I’m actually in the kitchen I add what feels right. So when my gut was saying take these out of the oven I let my brain win and I kept them in longer and they were perfect.

Another change I made was to dust my working surface with a mixture of flour and powdered sugar. You can totally see it in the pictures and I really liked the flavor it added.

I also didn’t mix in the chocolate chips. I just squished them into the top right before I baked it. I like how it made the chocolate chips a bit more melted into the top.veganchocolatechipsconerecipe

Ingredients
  1. 3 cups of all purpose flour
  2. 1 tbs. baking powder
  3. 1 tsp. baking soda
  4. 1/4 cup of cold butter {vegan or traditional)
  5. 1 1/4 cup of milk {soy or dairy}
  6. 1 1/2 tbs. vanilla extract
  7. 3/4 cup of vegan turbine sugar or half brown sugar and half white sugar
  8. 1 cup of chocolate chips
Instructions
  1. Mix all dry ingredients except the chocolate chips.
  2. Dice cold butter and cut into the dry ingredients.
  3. Add milk and vanilla and then hand fold into the dry ingredients, just until it is combined.
  4. Add in the chocolate chips.
  5. Shape dough into a circle and add slice marks.
  6. Bake at 400 degrees for about 35 minutes. You don’t want the scones to burn or get too brown, but they should be very well baked and a bit dry.
