I think horseradish gets a bad rep. Sure, it’s name is a combination of an animal and an undesirable vegetable, and it has a little spice to it, but I love it! Horseradish, mixed with just about anything, makes the perfect condiment in my eyes. It’s also very figure friendly with only 25 calories per 1/2 cup!
I recently experimented with a horseradish mustard that had been sitting in my fridge for a while. The flavor of this particular mustard was so strong, it didn’t really go well on sandwiches or as a dip. So, after much thought, I decided to try it as a dressing. Below is the result of my experiment! I ended up with a spicy coleslaw that my entire family loves (yes, even the kids)!
The honey helps to cut the strong horseradish flavor of the mustard, creating a perfect combination to top coleslaw.
- 1 package pre cut coleslaw
- 2 TBSP Horseradish Mustard
- 1 TBSP Honey
- 1 TBSP Apple Cider Vinegar
- 1 TBSP Canola Oil
- 1/2 tsp black pepper
- 1/2 tsp salt
In a large bowl that has a lid, combine everything except the coleslaw. Whisk ingredients until well blended. Pour the coleslaw on top and mix with a spoon. Put lid on bowl and shake, ensuring that all coleslaw is covered with dressing.
Coleslaw can be served immediately, or sat in the fridge until time to serve.
This coleslaw is an amazing compliment to barbecue dishes. I also like to put it on a hamburger bun, with some baked chicken for a mouthwatering chicken sandwich!
The flavors in this coleslaw intensify the longer it sits.
