We are getting ready for our tailgating party for the big game.
We always have a big crowd and I always make everyone’s favorite zesty, creamy, yummy, and easy – Queso made with RO*TEL and VELVEETA! I often wonder if they come to our football party to hang out with us too… or just for the food. I’m not going to ask because this queso really is awesome and I don’t blame them if it’s just for the food.
This year I’m mixing it up a bit… and making a queso bar with all of our favorite toppings.
That way everyone can have their favorite customized queso and go back for seconds, thirds (or lets be honest…) fourths and fifths as then like!
I made our custom queso bar using Ro*Tel and Velveeta to make the queso.
A huge bowl of queso is the most important part of the bar. Followed by all the yummy toppings including… sliced olives, black beans, sour cream, tomatoes and tortilla chips! I also took an extra can of RO*TEL and blended it a bit in the mixer as an extra topping. I cannot get enough RO*TEL so I always put some on the side to add to my queso.
That’s it for the food. I like to add some decorations to get us all in the football game mood… but I bet nobody would miss the decorations as long as there was queso!
And this happened a few times as I was setting this up.I just had to snack a bit on it!
What a great idea to make sure everyone gets their queso just the way they love it!
My favorite queso topping? More queso! I think I need to test out the queso bar before the Superbowl once or twice (or a few more times)!

I have never thought of doing a queso bar. I always just mix it up and then let people complain. This would be so much easier. We love queso in our house.

Ever since I met my husband years ago he has been eating Velveeta and RoTel as a night time snack probably twice and month! It is a family favorite for us because it is always delicious, melts perfectly and is easy! We will certainly have it on Game Day.
I won’t be watching the game-that is a certainty! Another certainty is I will be making this to snack on as I watch TV or perhaps as I am reading a book!
I have made this many times and its always a hit. Even my son who is the worst picky eater on the planet asks for more.

Until recently I had never even heard of Velveeta. But a local bakery uses them to make cheese zombies (which sounds weird and doesn’t make any sense, but they’re AMAZING!). They’re so addictive! This looks like a delicious dish. Making me crave nachos, which I haven’t had in months!
Ha…this looks like our table and since the superbowl is only 10 minutes from my house this year, you can bet we’re having all kinds of velveeta happening this year!

We love rotel and cheese dip in our house too. I like fajita chicken, scallion onions or red onions, jalapeños, and pico are a few of my favorite toppings.

I always have plenty of Rotel on hand at my house. We use Rotel for so much! But dips are our favorite.
