I love holiday baking! Making holiday cookies might be one of my favorite parts of Christmas… I love to make cookies so much that each year I bring some homemade cookies to friends and family right after Thanksgiving for them to enjoy as they decorate their homes for Christmas!

These peanut butter cookie sandwiches are fun to make and are always a huge hit!

The only problem is finding the time to shop and bake. This past week was no exception, it was a whirlwind. I started working with a new client that is close to home, but in a different part of town that I don’t normally go to. It’s actually been exciting to “discover” everything on the other side of town again, but I also have less time to get everything done. Thankfully one of my discoveries was a Smart & Final Extra! Store. I love being able to run in and get everything I need in one stop and they have club sized products {with really good prices} for things I need large quantities of and regular sized for my normal grocery shopping. Even better there are no club cards needed and no extra fee!

On this trip I bought some fresh fruit for my little one and supplies to make my husbands favorite peanut butter sandwich cookies! Smart & Final carries everything I needed to make these saving me precious time. I bought the regular grocery store sizes for most of the ingredients, but I went big on the flour and sugar since I will be needing them for my holiday baking this coming month. I was able to save quite a bit of money purchasing their store brand, First Street and the quality was top notch!

After I bought all the ingredients I picked up the girls from school and rushed home to get baking! There seems like a lot of steps to make these cookies sandwiches but it’s really not that complicated. You all know me… I like easy recipes and this one is easy… you just have to make the cookies, and the frosting and then drizzle the chocolate! Perfection!

Peanut Butter Cookie Sandwiches

Makes 16 very big cookie sandwiches.

Ingredients For Cookies:

  • 1 1/2 cups First Street Flour
  • 1/2 teaspoon First Street Salt
  • 1 cup First Street Peanut Butter
  • 1 1/2 teaspoon First Street Baking Soda
  • 1 teaspoon First Street Baking Powder
  • 1 cup First Street Butter
  • 2 First Street Eggs
  • 1 tablespoon First Street Vanilla Extract
  • 1 cup First Street Sugar
  • 1 cup First Street Brown Sugar

Directions for cookies:

  1. Mix all wet ingredients.
  2. Add all of the dry ingredients.
  3. Mix until it’s all combined… don’t over mix.
  4. Spoon onto a greased cookie sheet and bake at 350 degrees for about 10 minutes or until golden brown.

Ingredients for Frosting:

  • 1 cup of First Street Butter
  • 1 Tablespoon of First Street Vanilla Extract
  • 5 Cups of First Street Powdered Sugar
  • 1 Cup of First Street Peanut Butter
  • 1/4 cup of First Street Evaporated Milk

Directions for Frosting:

  1. Beat butter on medium speed.
  2. Add vanilla extract, evaporated milk and peanut butter and continue beating.
  3. Slowly add the powdered sugar and continue beating until it’s fluffy.

Ingredients for Chocolate Drizzle:

  • 1/2 cup of First Street Chocolate Chips
  • 2 tbs. of First Street evaporated milk

Directions for Chocolate Drizzle:

  1. Heat milk and chocolate chips in a microwave safe bowl for 15 seconds and stir. Repeat till the chocolate is melted.
  2. With a spoon, drizzle on top of the top cookie.
  3. Let them cool.

Directions to put the cookie sandwiches together:

  1. Pipe frosting onto one cookie and cover frosted cookie with a cookie that has the chocolate drizzle on top.
  2. Enjoy!

Peanut Butter Cookies For Santa #Shop

These cookies will be hand delivered to friends to kick off the Christmas season! I like to put a couple in some plastic wrap with a huge bow on top and drop them off right after Thanksgiving so that they can be enjoyed as my friends and family are decorating their homes for the holidays.

After my daughters saw these all put together, they have also decided that these will be our cookies for Santa this year. We heard he LOVES peanut butter and chocolate so we are going to be making him a plate full of these!
