My middle daughter and husband are doing a modified Paleo challenge along with the Crossfit studio they belong to.
Since we are all vegetarians we had to modify it a bit, mainly removing meat… but the principles of it have stayed the same. My daughter really wanted pumpkin pie so I decided to see what I could make for her and I came up with these Paleo Pumpkin Pie Bites.
The texture is surprisingly like a pumpkin pie. Silky smooth, but a little more muffin-like. The flavor, however, is totally pumpkin pie!
I love that they are made with Kelapo Coconut Oil because it adds an extra little tropical flavor that most pumpkin recipes don’t have.
These are perfect for Thanksgiving or just snacking on after a workout. We even had them for breakfast and an after school snack. The pumpkin is pretty filling so two will keep you full till your next meal.

These are so cute. We are trying to cut unnecessary calories and fat from our diets — this may be a great substitute for pumpkin pie!
