Healthy and Easy, Street Stand Potato Tacos with white sauce and avocado.

There is a little taco stand here in San Diego called Pedro's Tacos. They only have 4 locations and they are the ultimate fast and cheap Mexican food joint. Being a vegetarian I get a little tired of the old bean and cheese burrito and I got daring one day and tried a potato taco. I fell in love. The only problem is that they can be a bit high in calories with deep fried hash brown wedges, white sauce and tortilla. I knew I could make a really good replica that was a whole lot healthier. And I did! These are so easy to make and taste fantastic. When I shared on my Facebook Page that we were having "Potato Tacos" for dinner I got lots of "what are those" comments and I knew I needed to share these with you all right away! How to make these awesome tacos: I started with some low-carb tortillas that were warmed in the oven... just till they got a bit soft. While your tortilla is warming up place frozen hash brown wedges onto a baking sheet. Spray the sheet and the wedges with … [Read more...]

More Reasons To Love Whole Foods! Del Mar store now OPEN!!!

IF

On Monday night Pete and I had the honor of attending a sneak peek preview party at Whole Foods Del Mar! If you follow me on Twitter you know that I'm super excited about this new store opening! It's only 5 minutes from our office right off the 5 freeway in the Flower Hill Shopping Center! Even more importantly it's HUGE and really beautiful! We started the evening "sampling" some of the local products they carry. The orange slice above was from Escondido and totally delicious! As I move towards a more natural lifestyle knowing where my food comes from is very important. At Whole Foods they believe this is important too and add labels to all the local items to help shoppers make more informed buying disition. I love how open this store is. I've been in quite a few stores before and this one reminds me of the Las Vegas store for it's openness and bright but mellow feel. The traditional juice and Gelato bar is front and center and easy to get to so you can get a quick … [Read more...]

Pantry Challenge and a Better You too!

tn_IMG_7886

First week update and I did pretty darn good! I didn't do much shopping this week and what I did buy was either a great deal or was a necessity. I ran into Fresh & Easy to buy a loaf of bread... and you can tell by this picture that I left without my bread, but not empty handed! I always peak into the discounted fridge area where they put all of the stuff that expires the next day. Fresh & Easy always has a great marked down section because their products have no preservatives aka their stuff has short sell by dates. Squished in the back {aka hidden} were these 3 pizza's. Normally they are $3.50 each and they were marked down to $1.93. We do pizza night once a week so I froze these as soon as I got home and they will make for some super cheap meals, I'll just pull the pepperoni off and we'll be good to go! I also found these chopped onions for $.50. This is my favorite convenience food, well, after sliced bread that is. I love to just grab these and add them to chili or … [Read more...]
