Sophisticated Irish Nachos with CravOn Fries!

fpn_IMG_4077

I dream about a world where we can all eat food that we really like, that is healthy and still tastes good. Thankfully there are great companies popping up these days that offer a healthy, quality product that tastes great too! One such company is CravOn™ Fries! They make "Never Fried French Fries" that are washed, sliced, blanched, frozen and then brushed with olive oil and dusted with sea salt. French fries that are not fried and have all natural ingredient? How cool is that? They also have 50% less fat than fried potatoes... and they taste fabulous! CravOn™ kindly reached out to me to try their fries. How could I possibly say no to that? No way! A couple days later I had in my possession all 4 varieties of their potatoes, Ripple Cut, Steak Cut, Diamond Cut, and Anytime Diced. It was a tough decision deciding which potato variety to use and what to make... I know how much my husband loves loaded nachos so I decided to make him an Irish variation... Fluffy Cheesecake and Marshmallow Fruit Dip

fpn_IMG_3682

We have a little fruit stand close to my home that sells the most flavorful strawberries I've ever had. My little one would tell you that they are super juicy and that's true, but even more importantly they have the perfect balance of sweet and tart. The vibrant red color doesn't hurt either. We love to eat them just as they are... but sometimes it's fun to make a healthy fruit into a decadent dessert. Just being real here. When I was creating this masterpiece {once you taste it you will agree to this statement} I was focusing on easy and flavorful. Like so crazy easy that you can whip it up on a Friday night for the kids or make it the day before for a dinner party. Ready? Set! Go! Ingredients: 2 cups heavy whipping 1 tub of cream cheese 1 jar of marshmallow creme 1 tablespoon of vanilla {Use less if yours is alcohol based and you are serving to kids. Alcohol based will have a strong alcohol taste} Directions: Whip the heavy whipping cream until it has a … [Read more...]

Chocolate Chip Cookie Dough Muffins

fpn_IMG_3878

These are as delicious as they sound and taste just like chocolate chip cookie dough. You know when you bite into cookie dough and you can taste all the ingredients? The chocolate, the salt, the butter and the vanilla... this has it all and more! I almost called these cupcakes, but then I had a long philosophical meeting of the minds with myself and decided they were most definitely not cupcakes. These are muffins. Wondering how I was able to make the differentiation? Easy! Cupcakes rely on frosting to complete them. These depend on nothing and no one. They hold their own. The most important aspect of this recipe is that you remember you can't mess it up. As long as you follow the basic ingredient list you can add or exchange anything you want. I know that some people can't eat a cookie without nuts.... or they go nuts themselves. Add nuts! Hate chocolate chips? Is that even possible? Let's just pretend that it is. If you hate chocolate chips {it's hard to write that} then … [Read more...]

Macaroni and Cheese Masterpiece!

fpn_IMG_3942

This is by far my favorite mac n' cheese ever! It really is the best. It's the best for taste and how easy it is to make... and cleanup... one pot, that's it! I first posted about this almost a year and a half ago but the pictures did not do it justice even though it's one of my most popular posts ever. You can get the recipe here. You will not believe how easy it is. It also takes exactly the same amount of time as the boxes stuff {I times it}, but there are no added chemicals or other fillers. You know exactly what you are eating and you can feel good about feeding it to your kiddos. It's certainly not diet food so it's not something to eat everyday {you will want to, trust me}, but when you are craving Mac n' Cheese... this is is! I've made a few changes to the recipe lately to suite my changing tastes {why they are changing now is beyond me} I now use extra sharp cheddar cheese and a shake of garlic powder. I also add the butter to the milk before the pasta is added. This … [Read more...]

How To Make The Most Amazing Strawberry Milk Shake!

bestmilkshake

Milkshakes! Rich and cool ice cream! Do you know how to make the best one you will ever have? You are about to learn... I thought this was the perfect post for today. At 8:30am it was already in the 80's. I am loving this warm weather. I know it's not going to be here for long, but I am ready for summer and this is the ultimate treat! Milkshakes. They are they’re own kind of amazing. There are times when nothing meets the craving of a milkshake. Not regular ice cream or cocoa. It has to be a milkshake. Milkshakes have been around since the 1880’s. At that time however, milkshakes were an alcoholic whiskey drink that has been described as a "sturdy, healthful eggnog type of drink, with eggs and whiskey". I definitely prefer the modern day version packed with ice cream syrups and in short, more sugar than the human body can handle! Did you know that during his youth, former President Harry S Truman worked in an ice cream and soda shop as a teen? This is a kind of treat I … [Read more...]

“There are no words”, Cookie Brownies.

fpn_IMG_3706

Layers of brownie, white chocolate, dark chocolate, butterscotch chips and chocolate chip cookie. It doesn't get any better than this, it really doesn't. The flavors melt together to create something out of this world. You can eat them layer by layer or just take a huge bite and get all the flavors at once. I recommend a small mug of coffee or a tall glass of milk to wash it all down. Trust me, these are richer than Bill Gates, you will thank me later. These fall into a special category of desserts that are not cookies, but they are not cake either. Can't call them brownies. Bars are slightly accurate, but still not right. These are hard to describe. Sometimes you make something and it tastes so good that there are no words to describe it. Doesn't happen often, but when it does all you can do is keep eating. It's nice to also share with your friends and family, but I totally understand if you keep these all for yourself. I named them "There are no words, cookie brownies" because … [Read more...]

fpn_IMG_3597

Skinny Mexican Pizza! It's true. This is a calorie lightened version of the old fast food version. And it's a true vegetarian delight! There is no meat on it, but it still has that heartiness that everyone craves. The secret is the use of re fried and smashed kidney beans. After having these beans you will never want to go back to boring re fried pinto beans. Seriously this is so easy to throw together and has some of the best flavors ever. The first trick is to use extra sharp cheddar cheese. That way you can use less cheese but still get a whole lot of flavor. Ingredients: flour tortillas tomato kidney beans garlic, I use the frozen pureed cubes but you can use any form. lettuce extra sharp cheddar cheese There are only a couple steps. Making the beans, the tortilla "pizza" shells and assembling them. The beans are really easy to make. Spray a frying pan with non stick spray and empty a can of kidney beans liquid and all {do not drain them} into … [Read more...]
